RECIPE: BLUEBERRY AND BANANA MUFFINS

Hey lovelies


I have something a bit different for you today... a recipe! It was a dreary, miserable January afternoon so Jaymee and I decided that it was the perfect time to do some baking!! Want to bake some blueberry and banana muffins? Keep reading...

NOTE: Weigh your eggs and then weigh the caster sugar, margarine and flour to the same quantity, e.g our eggs weighed 135g so we used 135g of sugar, marg and flour.

Ingredients:

2 medium eggs
Caster sugar
Self-raising flour
Sunflower/vegetable margarine
Vanilla Extract (1tsp)
1 Large banana 
80-100g blueberries 

Makes approx. 12 muffins  




Method:

1. Pre-heat the oven to 200°C or 180°C for fan-assisted ovens
2. Weigh 2 eggs (This measurement will be how much sugar/flour/margarine you will need)
3. Add the sugar and margarine into a bowl and whisk
4. Add your flour to a separate mixing bowl and put to one side
5. Crack 1 egg into your sugar/margarine mixture
6. Add a tablespoon of flour to this mixture and whisk 
7. Add your remaining egg and a tablespoon of flour again and whisk
8. Fold in the remaining flour
9. Add vanilla extract
10. Wash blueberries and add to the mixture
11.  Mash or whisk your banana and add to mixture, stir well

12. Spoon mixture evenly into muffin cases
13. Bake for 20-25 minutes or until they are done (poke a knife into the muffin and if it comes out clean, they are done)
14. Place muffins on a cooling rack 
15. Eat all in one go! (Joking. Or am I?)

  4. Stumbled across your blog from your comment on Louise's latest post and I'm really glad I decided to head on over here. I have only read a couple of your posts now but I can already tell I'm going to love it since there's an air of positivity, which I'm all for.

    I've recently become obsessed with making banana pancakes so making these muffins is next on my to do list when I get the time (starting year eleven soon, eek!). Anywhoo those look delicious. And thanks to you I'm craving muffins at 10:44pm when I should be asleep. ;3 x

    1. Hello! Aw I'm so glad you like them, I'm definitely into the whole positive thinking thing and try to make my blog radiate that! It's something I've always needed so if I can provide that for other people then I feel as if I'm making a difference, even if it's just to one person on one day.

      Mmm banana pancakes sound delicious! I hope you get some time to make the muffins because they're soooo good. Good luck with starting year 11, I really hope it goes well :)
