GF/DF Chocolate Fudge Brownies

It's really darn hard to make a good chocolate brownie. Getting that perfect texture that's not too dry and crumbly, and not a runny puddle on a plate is something of a challenge. Throw in the curveball of wanting to make them gluten free too and you're in for a tough time.

Except with this recipe, my friends. I have never baked such delicious gluten and dairy free brownies as these, and if like me you have food sensitivities, all your prayers and hopes and wishes and gooey chocolate-flavoured dreams are about to be answered.

Note: These brownies can also be made non-GF, simply use your bog-standard plain wheat flour.
Also Note: These brownies are not exactly healthy, but quite frankly I don't care about that because they taste blimmin' delicious!

Cook Time: 25 min

Yield: 9 (or 12 smaller) brownies

You will need: 

Gluten-free plain flour - 1 cup (125g)
Cocoa powder (sifted) - 3/4 cup (86g)
Salt - 1/4 teaspoon
Dairy-free margarine (melted) - 3/4 cup + 2 tbsp (200g)
Sugar - 1.5 cups (300g)
Vanilla extract - 1 tbsp
3 large eggs
Dairy-free chocolate chips - 3/4 cup (128g) (and some for sprinkling on top)


  1. Preheat the oven to 200°C (180°C for fan ovens) and line an 8"×8" (20cmx20cm) brownie tin with grease-proof paper
  2. In a medium mixing bowl, add the flour, cocoa powder and salt. Mix together and set aside.
  3. In a large mixing bowl, add the melted margarine, sugar and vanilla extract. Mix together with a wooden spoon.
  4. Add half of the dry mixture to the wet mixture and stir until no flour is visible.
  5. Add the 3 eggs one at a time, and mix again, before adding the remaining dry mixture. Give the batter a thorough stir.
  6. Fold in the chocolate chips
  7. Pour the batter into the lined brownie tin and then bake in the oven for 20 minutes (or until nearly firm)
  8. Sprinkle chocolate chips (and marshmallows if desired - we did desire) and cook for a further 5 minutes (or until cooked).
  9. Remove from oven and leave to cool before cutting into 9 or 12 squares. 
  10. Store at room temp for up to 5  days or refrigerate to make them more fudgey.
  11. Take pretty pictures to Instagram and make all your mates jel.
  12. Tuck in!
